Purpose. This register is the cafe's daily record of fridge, freezer and display temperatures and completed cleaning tasks, and is the evidence the council inspector asks to see.

1.What the register records

The register has one page per day. It records the opening and closing temperature of each fridge, the freezer and the display cabinet, the name of the person who checked, and a tick for each cleaning task on the schedule with the initials of the person who did it.

  • Fridge 1 (milk and dairy), fridge 2 (sandwich fillings), freezer, display cabinet
  • Opening temperatures by 7:30 am and closing temperatures by 3:00 pm
  • Daily cleaning: benches, boards, sinks, coffee machine, floors, bins
  • Weekly cleaning: fridges inside, shelves, range hood filter, drains

2.How to record a temperature

Use the probe thermometer or the fridge display. Write the number with the unit, for example 3 degrees Celsius, and your initials. If a reading is above 5 degrees Celsius for a fridge or above minus 15 degrees Celsius for the freezer, tell the supervisor straight away and write what was done in the Action column.

3.Who checks it

The supervisor must check the register each afternoon and sign the bottom of the page. Missing readings must be followed up the same day. The Centre Manager will review a sample of pages each month.

4.Keeping the register

The register is kept on the clipboard by the kitchen door. Completed months are filed in the office and kept for two years. The register must be available to the council environmental health officer during any inspection.

5.Problems

If a fridge fails, move the food to another fridge, record the time and the temperature of the food, and tell the supervisor, who will decide what can be kept. Record the repair request on the Task Board.
